Spanish Corn Bread - This easy spanish bread recipe has the zesty combination of green chilies, sharp cheddar cheese, with cornmeal and whole wheat flour. Oven baked until piping hot and the cheese melted it is also quite versatile and a favorite at our house. Enjoy it on its own, toasted, for breakfast or snack, makes an excellent sandwich for lunch, or even with, or before your dinner.Prep Time: 10 mins

Ingredients to make Spanish Corn Bread
1 c + 2 tb yellow cornmeal
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 c Whole wheat flour
1 1/4 c Buttermilk
1 Egg + 1 egg white, lightly beaten
1/4 c Sharp chedder cheese
2 tb Mild green chili, chopped
Directions to make Spanish Corn Bread
Step 1:Preheat oven to 450 degrees. Coat an 8inch square baking pan with now stick cooking spray and dust with 2 tablespoon of cornmeal. Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
Step 2:In another bowl combine buttermilk, eggs, cheese and chili or chile, then stir into the dry ingredients. Pour batter into the prepared baking pan and place in upper third of oven.
Step 3:Bake 10 minutes or until dough is firm in center.

Baked Salmon Feta Wrap - This creamy, cheesy baked salmon recipe, is another less than “30 Minute Meal”, that can be served as lunch or dinner, and is especially awesome for brunches! This very tasty blend of feta cheese, smoked salmon, and poppy seeds, is a very quick and easy recipe, as well as a little exotic.

Ingredients to make Baked Salmon Feta Wrap
3 oz Smoked salmon, diced
6 oz Cream cheese, softened
3 oz Feta cheese
1 Egg, slightly beaten
1 t Capers
2 tb Finely chopped parsley
4 Scallions, topped, diced
1 tb (or more) poppyseeds
1 frozen pastry sheet, cut into a 3 X inch rectangle and some melted butter.
Directions to make Baked Salmon Feta Wrap
Step 1:Preheat the oven to 375 degrees. In a medium bowl, hand mix the salmon, cream cheese, Feta cheese, egg, capers, parsley, and scallions.
Step 2:Roll out the pastry sheet to double its size. Liberally brush it with melted butter. Spread the salmon mixture over the sheet. Roll up, jelly-roll style, folding the ends in to seal. Brush the top of the roll with melted butter and sprinkle with poppy seeds.
Step 3:Make 1/2 inch deep diagonal slashes across the roll to allow steam to escape. Bake the roll for 20 to 30 minutes or until golden.
