Spanish Corn Bread - This easy spanish bread recipe has the zesty combination of green chilies, sharp cheddar cheese, with cornmeal and whole wheat flour. Oven baked until piping hot and the cheese melted it is also quite versatile and a favorite at our house. Enjoy it on its own, toasted, for breakfast or snack, makes an excellent sandwich for lunch, or even with, or before your dinner.Prep Time: 10 mins

Ingredients to make Spanish Corn Bread
1 c + 2 tb yellow cornmeal
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 c Whole wheat flour
1 1/4 c Buttermilk
1 Egg + 1 egg white, lightly beaten
1/4 c Sharp chedder cheese
2 tb Mild green chili, chopped
Directions to make Spanish Corn Bread
Step 1:Preheat oven to 450 degrees. Coat an 8inch square baking pan with now stick cooking spray and dust with 2 tablespoon of cornmeal. Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
Step 2:In another bowl combine buttermilk, eggs, cheese and chili or chile, then stir into the dry ingredients. Pour batter into the prepared baking pan and place in upper third of oven.
Step 3:Bake 10 minutes or until dough is firm in center.

Sour Cream Chocolate Cake - This super moist, “chocoholics” dream recipe is without a doubt decadent! Not only is there chocolate, chocolate everywhere, we added sour cream and 3 eggs to the devils food cake mix for a total “Melt In Your Mouth” chocolate cake. We also added a hint of fruity flavor to the frosting. Delicious.

Ingredients to make Sour Cream Chocolate Cake
1 box devil’s food cake mix (1 pound 2.25 ounces)
1 cup water
1/3 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 12-ounce packages semisweet chocolate chips (4 cups)
1/2 cup seedless raspberry jam
3 tablespoons unsalted butter
2 cups powdered sugar
Directions to make Sour Cream Chocolate Cake
Step 1:Position rack in center of oven and preheat to 350°F. Butter three 8-inch-diameter nonstick cake pans with 1 1/2-inch-high sides. Place devil\’s food cake mix, 1 cup water, 1/3 cup vegetable oil, eggs, vanilla extract and 1/4 cup sour cream in large bowl. Using electric mixer, beat batter 2 minutes. Stir in 1 cup semisweet chocolate chips.
Step 2:Divide batter among prepared pans (about 1 3/4 cups batter for each). Bake until tester inserted into center of cake layers comes out clean, about 25 minutes. Cool cake layers in pans on racks 15 minutes. Run small sharp knife between pan sides and cake layers to loosen. Turn out onto racks; cool completely. Bring 1/2 cup raspberry jam and 3 tablespoons unsalted butter to simmer in heavy large saucepan over medium heat, stirring often. Remove from heat. Add remaining 3 cups semisweet chocolate chips and stir until melted. Add remaining 3/4 cup sour cream and 2 cups powdered sugar. Using electric mixer, beat frosting in pan until smooth and thick, about 2 minutes.
Step 3:Place 1 cake layer on platter. Spread 3/4 cup frosting over. Top with second cake layer. Spread 3/4 cup frosting over. Top with third cake layer. Chill cake until frosting sets slightly, about 15 minutes. Spread remaining frosting in swirls over top and sides of cake. (Can be prepared 1 day ahead. Cover with cake dome and let stand at room temperature.)

Baked Spaghetti with Cheese - This hearty, cheesy, baked pasta recipe is made with fresh pasta and a homemade tomato “gravy” sauce, recipe included. Layered with the gravy sauce and cheddar cheese, we oven baked it until the cheese melted through. A quick and easy, homemade, pasta recipe, that is always a hit.

Main Ingredient: Spaghetti

Ingredients to make Baked Spaghetti with Cheese
1 lb Spaghetti
1 tb Salt
1 md Onion, chopped
4 tb Cooking oil
15 oz Tomato sauce
16 oz Tomatoes, chopped
Salt Pepper to taste
9 oz Cheddar cheese
1/4 c Seasoned breadcrumbs
Directions to make Baked Spaghetti with Cheese
Step 1:Boil spaghetti for 15 minutes in salted water; drain.
Step 2:Make tomato gravy by frying onion in oil, adding tomatoes and salsa, then salt and pepper. Cook 20 minutes. Cut up cheese; 1/3 package in small pieces and 2/3 package in strips. Spray large glass baking dish with no-stick cooking spray.
Step 3:Place 1/2 spaghetti in dish. Add small pieces cheese, half the gravy and then sprinkle bread crumbs on top. Add remaining spaghetti, cheese pieces and gravy. Top with cheese strips and breadcrumbs. Bake at 350 degrees for 25 minutes.

Ingredients to make Oven Baked Apple Cake
3/4 c All-purpose flour, sifted
3/4 c Whole-wheat flour, sifted
1 ts Baking powder
1/4 c Honey
1/2 c Brown sugar, lightly packed
1/4 c Oil
4 lg Egg white
1 tb Nonfat yogurt, plain flavor
5 Apples, peel/core/slice thin
Topping
Bring to a boil: 2 tb Oil
1/4 c Granulated sugar, OR brown sugar
1 ts Cinnamon
1 ts Natural dehydrated butter
Directions to make Oven Baked Apple Cake
Step 1:Preheat the oven to 425F. Grease a 9×13 inch baking pan.
Step 2:Sift both flours and the baking powder together in a medium sized bowl. Beat the honey, 1/2 cup brown sugar, vegetable oil, egg whites, and nonfat yogurt together. Pour this into the flour mixture and stir well. Pour the dough into the prepared pan and smooth out evenly. Lightly press the apples into the dough in straight lines. Bake for 10 minutes at 425F.
Step 3:Remove the cake from the oven. Drizzle the topping over the top of the apples. Return the cake to the oven and bake at 375F for 15 to 20 minutes or until cake tester comes out clean.
