Hearty Quiche - This sensational, untraditional, oven baked quiche, is so hearty, its a meal all on its own! Flavorful veggies, two creamy cheeses, crunchy bacon, and even pasta are baked into this unique quiche. Ideal for brunches, potlucks, and well anything really!
Prep Time: 15-20 mins
Cook Time: 60 mins

Ingredients to make Hearty Quiche
1 (7-oz) or 1/2 lb pkg elbow macaroni,(2 cup), uncooked
6 sl To 8 sl bacon chopped
2 c Shredded american cheese
2 c Shredded monterey jack cheese
2 c Soft bread cubes
1 md Onion finely chopped
1 sm Green bell pepper finely chopped
4 Egg separated
2 c Milk
1 ts Salt
6 To 8 drop bottled hot pepper sauce
Red salsa (optional)
Directions to make Hearty Quiche
Step 1:Prepare elbow macaroni according to package directions; drain.
Step 2:In medium skillet, cook bacon until crisp; drain. In large bowl, combine macaroni, bacon, cheeses, bread cubes, onion and green pepper. In medium bowl, beat together egg yolks, milk, salt and hot pepper sauce. Add to macaroni mixture; mix well.
Step 3:In large bowl, beat egg whites until stiff. Fold into macaroni mixture. Put into buttered 12 inch quiche dish or a 13 x 9 inch baking dish. Place a shallow baking dish with 1-2 inches water on lowest rack of a 325 degree oven.
Step 4:Place quiche on center rack. Bake until set and knife inserted in center comes out clean, about 1 hour. Let stand 5 minutes before cutting. Garnish as desired. Serve with salsa.

Spanish Corn Bread - This easy spanish bread recipe has the zesty combination of green chilies, sharp cheddar cheese, with cornmeal and whole wheat flour. Oven baked until piping hot and the cheese melted it is also quite versatile and a favorite at our house. Enjoy it on its own, toasted, for breakfast or snack, makes an excellent sandwich for lunch, or even with, or before your dinner.Prep Time: 10 mins

Ingredients to make Spanish Corn Bread
1 c + 2 tb yellow cornmeal
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 c Whole wheat flour
1 1/4 c Buttermilk
1 Egg + 1 egg white, lightly beaten
1/4 c Sharp chedder cheese
2 tb Mild green chili, chopped
Directions to make Spanish Corn Bread
Step 1:Preheat oven to 450 degrees. Coat an 8inch square baking pan with now stick cooking spray and dust with 2 tablespoon of cornmeal. Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
Step 2:In another bowl combine buttermilk, eggs, cheese and chili or chile, then stir into the dry ingredients. Pour batter into the prepared baking pan and place in upper third of oven.
Step 3:Bake 10 minutes or until dough is firm in center.

Baked Spaghetti with Cheese - This hearty, cheesy, baked pasta recipe is made with fresh pasta and a homemade tomato “gravy” sauce, recipe included. Layered with the gravy sauce and cheddar cheese, we oven baked it until the cheese melted through. A quick and easy, homemade, pasta recipe, that is always a hit.

Main Ingredient: Spaghetti

Ingredients to make Baked Spaghetti with Cheese
1 lb Spaghetti
1 tb Salt
1 md Onion, chopped
4 tb Cooking oil
15 oz Tomato sauce
16 oz Tomatoes, chopped
Salt Pepper to taste
9 oz Cheddar cheese
1/4 c Seasoned breadcrumbs
Directions to make Baked Spaghetti with Cheese
Step 1:Boil spaghetti for 15 minutes in salted water; drain.
Step 2:Make tomato gravy by frying onion in oil, adding tomatoes and salsa, then salt and pepper. Cook 20 minutes. Cut up cheese; 1/3 package in small pieces and 2/3 package in strips. Spray large glass baking dish with no-stick cooking spray.
Step 3:Place 1/2 spaghetti in dish. Add small pieces cheese, half the gravy and then sprinkle bread crumbs on top. Add remaining spaghetti, cheese pieces and gravy. Top with cheese strips and breadcrumbs. Bake at 350 degrees for 25 minutes.

Ingredients to make Yukon Baked Potatoes
10 c Thinly sliced Yukon potatoes
1 cn Cream of mushroom soup,10-1/2 ounce can
1/4 c Finely chopped onion
1 c Milk
1 Stick butter or margarine, melted
2 c Grated cheddar cheese
1/2 ts Salt
1/2 ts Pepper
Directions to make Yukon Baked Potatoes
Step 1:Spread half of the sliced potatoes in the bottom of a greased baking dish. In a medium bowl, combine remaining ingredients (except potatoes) and pour half the mixture over the first layer of potatoes.
Step 2:Repeat layers of potatoes and mixture. Cover and bake at 350 degrees for 1 hour. Uncover and bake 30 to 45 minutes longer.
